Healthy Eating - Recipe of the Month - Sweet & Tangy Salsa

This is a very simple recipe that I just recently tried out. It’s a great addition to any dish you make at home. I’ve had it with Salmon and Grilled chicken breast and I absolutely loved it!
Ingredients
1 Cucumber
1 Spring onion
1 Mango
Handful of black olives
1/2 Red onion
1 Large lemon
1 large orange
Extra virgin olive oil
Salt
Black pepper
Method
Simply chop the cucumber, spring onion, mango, olives and red onion into small pieces. Once
you’re done put them in one large mixing bowl. Drizzle with 2 tablespoons of extra virgin olive oil,
squeeze the lemon and orange juice into the mixing bowl (taking out the seeds) and mix! Season
with a pinch of salt and black pepper to your taste.
That’s it, a simple sweet and tangy salsa that can go with almost any protein dish.
You can keep any left overs in the fridge for a few days. Enjoy!
